Pasta e Fagioli

Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Cook, stirring frequently, for 5-8 minutes or until veggies begin to soften.

Add garlic, oregano, and red pepper. Stir constantly for about 30 seconds. Add tomatoes, chicken broth, kidney beans, and bay leaves. Bring to a boil then reduce heat to a simmer. Cook for 25-30 minutes. Add pasta about 10 minutes before it’s done.

Add salt and pepper. Discard bay leaves. Stir in parsley and enjoy.
